The Best Kitchen Appliance for Simplifying Life: The Instant Pot

In this post, I want to introduce you to the best appliance I have ever purchased: The Instant Pot! It has saved my family so much time, money and effort in preparing meals that I had to mention this appliance as my top recommendation, in my book: The Forever Fat Burner.  You can purchase one for yourself here. Today I want to share with you a quick, easy and inexpensive shredded chicken recipe that you can top on any salad, use as a taco filler or in your favorite soup. In essence, you can have fabulous shredded chicken in about 45 minutes from start to finish.  So, let’s get to it!

STEP 1: GATHER YOUR INGREDIENTS

For this recipe, you need only two:

    1    Salsa of your choice (I prefer Trader Joe’s Garlic Chipotle salsa).

    2    Two chicken breasts (I use Trader Joe’s Organic Chicken Breasts in the frozen food aisle).

STEP 2: PUT YOUR INGREDIENTS INTO THE INSTANT POT

    1    Pour your salsa and your two chicken breasts into the Instant Pot and close the lid.

    2    Press the “poultry” button and walk away.

STEP 3: STEAM

    1    While it isn’t necessary to use the steam function when I am in a hurry, if I have some extra time, I will use the steam function. So after the beeper goes off letting you know that the poultry setting is done, you can press “steam” and walk away.

    2    When the steam function is done, then push the “release nozzle” on the lid from “sealing” to “venting”.  Stay safe by keeping your face away from the steam.

STEP 4: MIX & MASH

Mix and mash the chicken breasts until you have shredded chicken.

STEP 5: ADD TO YOUR FAVORITE MEAL

You can now add the shredded chicken on top of a salad for a great taco salad or fill your tacos with your newly seasoned poultry!
